I started a challenge with two of my co-workers here at work. We start on Monday. We are calling it "the 25 challenge". The first person to reach 25 lbs. lost is the winner. The other two losers have to pay $25.00 each to the winner. I like it because we don't have a deadline. It is just the first person to get there. I hope I win. They see that I am losing and keep saying that they need to lose too. They don't have nearly as much to lose as I do but they are both quite a bit shorter than me so that does make a difference too. One of them struggles real bad with her cholesterol and the doctor told her if she didn't lose some weight he was going to have to put her on another pill. I hope she sticks with it. I can't talk them into doing Atkins with me but as long as they find something that works that is all that matters. And, hopefully this will give me more insentive and them too.

I have been feeling bad the past few days. Had a sorethroat over the weekend and then yesterday I was achey all over. By last night my head was all stopped up. Today I took some DayQuill and feel a little better but still dragging and sneezing every once in a while. I skipped Zumba last night because I felt so bad. I almost forced myself to go but I'm glad I didn't. By the time I got home I was really feeling bad. I hate to miss though. Tonight I have got to get some yard work done no matter how bad I feel. We are having our daughters graduation party May 8th and it has rained here for the past 4-5 days straight and it is suppose to start up again on Friday and rain all through the weekend. So I have got to get some things done tonight and tommorrow night no matter how I feel.

I am really going to have to be strong the next two weekends. This Saturday we are having a fundraiser at the VFW. We are calling it Derby Day (for the Kentucky Derby of course). It will be lots of fun. Gambling, Hat contest, and of course food and drink. And, as usual, I am in charge of the food. I am making Hot Browns, Kentucky Burgoo, burgers, and fries. Plus I am making chocolate bourbon balls. The good news is I don't like bourbon so my husband will have to be the guinea pig to see if they taste good. And, I am making the cheese sauce for the Hot browns out of heavy cream and cheddar cheese. I should be able to have everything in the hot browns except for the toast and I will just leave that out of mine. Of course the recipe I have doesn't make the cheese sauce that way but I have been making it that way sometimes to be on my veggies and it is good so that is what I am going with. It is easy and I will be able to eat it. Then next weekend is the grad party. We are having a big cookout and of course I am cooking. We will have potatoe salad, baked beans, and cake. But I am also going to make a veggie tray and maybe some other side that I can have. We will have alot of meat. DH is smoking a turkey and pork loin so that will be good. He is also making a huge kettle of bean soup. I can prepare ahead of time but the hard thing is going to be having the food around me that I like and staying away from it, especially when I am preparing it. But I can do it. If my daughter is there she will make sure of it. She keeps me on track. She likes to be bossy to her mom. LOL

You can always make some cole slaw with splenda instead of traditional sugar. I have friends and family that aren't dieting that request it.

Make sure you make some food that you can eat. Take care of you even though you will be busy. You can avoid temptation if you prepare to have choices for you.
