Weight still holding. Made a big pot of Navy Beans this morning (put them on in the InstantPot at 3:45am, when I couldn't sleep). I'll post my trial-and-error recipe below this post.
Yesterday, I found out that my husband has been paying for an Audible membership and a Kindle membership for the past 12 months! I had signed up for them in January and forgot to cancel them when I stopped using them. $25 bucks a month, wasted. Cancelled the Kindle, but I have 12 credits to use or lose before I cancel Audible. So, I ordered a couple of things that I think might help me. The one most pertinent to FatSecret is one that has Christian Weight-Loss Affirmations. I started listening last night with my phone under my pillow. Hopefully, putting these positive things in my mind will help to change my behaviors.
Son & his family are moving out of our basement this weekend. They also just applied for SNAP benefits (Food stamps), so it should help US by not having to support them so fully. Once they get moved to the house, I will stock them up with paper products (toilet paper, paper towels) and cleaning products (Dawn dish soap, Clorox wipes, laundry soap, etc.) I'm praying the SNAP benefits will be enough that they'll be able to get all the food they need each month!
INSTANT POT NAVY BEANS 1 pound dry navy beans, rinsed (no need to soak) 8 cups water 6 slices of salt pork fat back 1/3 pound country ham, sliced thin and then cut into 1/2" pieces
Put all ingredients into Instant Pot. Cook on High pressure for 40 minutes, then let Natural Release (which takes 1/2 hour or more). Once done cooking, remove & discard rendered fat back. Recipe can be doubled and still work in the 6-quart InstantPot (that's what I did this morning for the first time).
Still below freezing in the mornings here, but the temps are supposed to be in the mid 50's to high 60's in the 10-day forecast.
Thankfully, we have already removed the leaf net from the pool, so it won't get pollen all over it once Spring arrives. Debating whether to open the pool this year or just join the community pool ($500) for the summer. They have a diving board in the "well," which goes form 9' to 12' depth. My little grandson JUST had learned to tread water and jump off the diving board before the last pool season ended. Ours is 52" deep, but he can still walk around it on his tiptoes, which is why it was hard to get him to learn to tread.
OH, I also got an audio book on Setting Boundaries with Your Adult Children! I'm looking forward to reading (listening to) that one! I have a tendency to want to be the Rescuer all the time, and it's a hard trait to reverse.
