Put a batch of seitan in the crockpot. I like this recipe better than my old, baked one - meatier. Found it on the Vegans Eat What? site. Trying to bump up my protein since I just this morning started lifting. May have to allow myself more calories

I'm not wedded to a specific number on the scale, just want to be fit and healthy

Hello writingwyo I'm glad your lifting now that is awesome!!! Your food looks delicious although I never had seitan before.

Thanks, fatd! I really do love to cook, and I'm blessed with a husband who eats whatever I put in front of him, not only (generally) without complaint, but with genuine appreciation. He actually likes it when I go on a diet, because he likes the food. He's never seen a veggie he didn't like 😃

Thanks, buenitabishop! Seitan is a great low-cal, low-fat, vegetarian protein source, and has the most meat-like texture of the things I've tried. (Although I do still love my tofu.) You might try it sometime!

And I'm definitely feeling the lifting today, even though I used fairly light weights, as I'm just learning the exercises and my limits

I read it takes on whatever flavor you give it. Lol I think I will try Tofu first writingwyo.

MyanW -- here's the recipe link https://veganseatwhat.wixsite.com/products-veganseatwhat/crockpot-seitan. We don't have AC, so this works much better in the summer than the baked recipe I was using. The crockpot I can put outside and not heat up the house. Plus, I like the texture better. I've been adding some seasonings to it, even though the recipe doesn't call for it. I wrap the extra ones (it makes 4 big chunks) tightly in foil and freeze them until I need them
