I knew spaghetti squash had fewer calories than pasta, but I didn't realize HOW big the difference was. Really light, even with the seitan, so I added a slice of hubby's homemade bread and had a medjool date and 3 pecans for dessert.

Is indeed, Redporchlady. Now that I've learned I can just poke holes in a winter squash and throw it in the oven to roast instead of risking fingers trying to cut it in half, I think I'll make it more often :D

JustBananas - I did find the bread (and the fig and pecans) necessary. Not from a taste standpoint, but from a getting enough calories in the meal so I wasn't hungry in 15 minutes standpoint. The squash was only 42 calories for a huge portion, so with the sauce and the seitan, it only came to 150 total. With the bread and dessert, it came to about 300.

Spag squash is a great substitute, and easy to grow! Sometimes I'll use carrots. I use a knife to cut long thin strips, takes a lot of patience. I always wondered if a zoodle would work or if that thing is just gimmick gadget.

It was great, Navywifeski. My dad grew it once, and we were all excited to try it, and we all hated it. 🤣 But I have much more expansive tastes as an adult! This is a definite repeat. It is so, so easy to overdo it on pasta. Not that I'm cutting it out permanently, but it's a food I definitely have to measure and not eat every night.

I don’t remember eating spaghetti squash but I picked a lot of it when I worked for my grandpa during the summer. It was my favorite thing to pick. That and honeydew melons.

is a zoodle the same as a spiralizer, Beaux? Might be a fun kitchen toy to have, but I love kitchen toys. I don't know that I'd have the patience to do the carrots that way. Daddy Manatee -- my dad had a huge garden we all worked in. A lot of tomatoes, beans, kholrabi, cabbage, peppers and okra, but mostly the tomatoes and beans. Loved the days when Dad would bring in the beans in 5-gallon drywall buckets (multiple trips) and we'd all hang out together and snap beans.

@Wyo: I looked to see how much your portion was (just 1 cup), so that makes sense. I cook & eat the entire squash (8 cups), which has 12 grams of fiber for the low, low price of 250 calories. THAT's filling 😄

Spaghetti squash is pretty mild. Any sauce you put on it will be the star.
I'll roast mine w olive oil and with a dash of nutmeg.
Or roasted then topped w sourcream, parmesan cheese, and white pepper.

It doesn't have the same 'chew' as spaghetti pasta, closer to really really fine angel hair... it doesn't have a strong vegetal taste either.

Spiralizer works on a lot, but I now avoid butternut squash because it almost killed mine.

I have been away from pasta for so long that I now prefer either spaghetti squash or noodles with my pasta. Yours looks delicious!👍
