Carrot Oatmeal Muffins INGREDIENTS 1/2 cup unpacked brown sugar 4 & 1/3 cup, 120 g quaker large flake oats 1 cup all purpose white flour 1 & 1/2 cups grated carrots 1 large egg 3/4 tsp sea salt 1 tsp cinnamon 1 tsp vanilla extract 1/2 tsp nutmeg (ground) 1 container, 113 g great value apple snack unsweetened 36 g no name walnut pieces 1 tsp baking powder (sodium aluminum sulfate, double acting) 1 tsp baking soda Bake 350C for 30 minutes

Great! Let me know how they turn out. Note that I soak the oats in a bit of water while I prepare the rest. I don’t measure the water, just enough to moisten the lot.
