start with a base of coleslaw salad, no dressing, mix in 1/4 cup shredded bbq or tex mex chicken, 1/4 cup black beans, 1/4 cup of shredded cheese, and some baby tomatoes. you can add chopotle dressing if desired, I did not! this served 4 people for dinner

Looks delicious. I eat coleslaw and I make my own Chipotle dressing with non fat greek yogurt and delicious and low with calories.
