whipped cauliflower w a dash of half/half , butter and a dash of buttery mashed potato flavoring... (yes its a thing..!!)

Or just modify, half potato and half cauliflower. Small change with no loss of texture or taste, but with positive impact over time.

Many years ago we had potlucks all the time in my ER. One of the well traveled docs would bring in a cookbook from some foreign country and we each chose a recipe to make. Once I made mashed potatoes with a combo of russets, cauliflower and carrots. It is an Irish thing. We all loved it and so did all of our kids. I still make it today.

Thank you, Kenna! I love cauliflower in just about everything, so I’ll go all in if I decide to make them myself. But this is my tasting a bit of Denise's non-diet cooking. She does not subscribe to the low carb diet, nor does my son. So as many cool things that she makes especially for me, sometimes I have to eat the regular stuff even in moderation!

BSprouts always lead the lov'em-hate'm veggie discussions...along with brocc, cauli, and cabbage, they are a definite cruciferous go to for me.

I rotate these little dudes with cauliflower and broccoli all the time. Going to do even more this week as I do FMD!
