My cooking always looks worse than it tastes ( observe the salmon falling apart ;) ). Anyway, I only eat two meals a day and the second one is always just 400g of belgian lowfat yoghurt on a couple of chopped up bananas, so I always try to make lunch special. One of my favourites is this. Poached salmon (200g) along with carrots, broccoli, cabbage and about 200g of chopped potato (all steamed around the salmon). The fish is already seasoned with salt and garlic before it goes in, so then I can add kabayaki or lemon sauce after. I put a light ceasar salad dressing on the potatoes (it has a bit of pepper in to return some of the crunch that boiling loses. Basically it tastes lovely and requires all of the minimal skill that I possess and 8 minutes of your time :)
