Vegetable Minestrone Soup
A tasty and healthy vegetable based soup, to be made in a slow cooker.
Ingredients
Directions
- Mix all ingredients except rice and basil in a 3 1/2 to 6 quart slow cooker.
- Cover and cook on low heat setting for 6 to 8 hours or until vegetables are tender.
- Stir in rice and basil. (Note, if you are not using instant rice, cook the rice first as per package directions.)
- Cover and cook on low heat setting for about 15 minutes or until rice is tender.

I've made a similar recipe. I don't use the marjoram, tomatoes, cabbage, rice and basil but I add rosemary and frozen peas. Be aware, you can use frozen veggies in this, and it is awesome, especially on a cold day!
