An easy Frittata or egg pizza with just a few ingredients.
Ingredients
Directions
- In large frying pan, sauté spinach in olive oil. Spread spinach evenly over the pan.
- Mix cream and eggs. (You can substitute milk for cream).
- Pour egg mixture over spinach.
- Cook over low heat until eggs are firm, or cook in the oven.
- After eggs are firm, flip the eggs and spinach 'crust' over in the frying pan.
- Add tomatoes and feta cheese.
- Cover frying pan over low heat until tomatoes and cheese are warm. Cut into four slices and serve.
- Note: for variety use salsa and shredded cheddar instead of tomatoes and feta.

Reviews
I made it with egg whites and skim milk. Also substituted low fat mozarella cheese for feta cheese. It tasted okay but prob will not make it again.

Sounds delish. Im going to try this with liquid eggs, or egg whites to save on fat and cholesterol though and maybe low fat milk.
