Spinach and Leek White Bean Soup with Ham
Easy to make, delicious and filling soup, that can be made vegetarian with a few substitutions.
Ingredients
Directions
- Heat olive oil in a large saucepan over medium heat.
- Add the leeks and garlic. Sauté until tender.
- Stir in the chicken broth, cannellini beans, turkey ham and cumin.
- Bring to a boil, then reduce heat to low.
- Stir in the couscous. Cover and simmer for 5 minutes.
- Stir in spinach and season with salt and pepper.
- Serve immediately.

Reviews
This soup doesn't really need the couscous. It's better to make it separate and put it over the top so as it stays for a few days it doesn't continue to expand. Otherwise, very good and super easy to make on a weeknight.
