Spinach and Chicken Manicotti
A wonderful combination of pasta, ricotta and marble cheese, tender chicken breast and leafy spinach covered with a perfect tomato sauce.
Ingredients
Directions
- Boil the manicotti pasta in water for about 6 minutes.
- Meanwhile, mix together the ricotta cheese, spinach, chicken and spices to taste (add chili powder too if you like).
- Drain the pasta carefully and as soon as you can handle touching them, lay out on the counter to avoid crushing and getting stuck together.
- Holding the noodles with your finger blocking one end and cupping the rest, gently stuff them with the spinach mixture with a fork.
- Place them in rows in a greased pan (Pam works great). Cover with spaghetti sauce.
- Add 1/2 cup water to baking dish and cover with tinfoil (this will let the pasta absorb the additional moisture.)
- Bake at 350 °F (175 °C) for 25 minutes and remove the cover.
- Sprinkle with cheese of your choice and bake until almost all additional moisture is gone and the cheese is nice and gooey. Serve with a side of salad or steamed vegetables.

I would have this again, but I had to adjust it some decrease pepper increase the ricotta 1/4 cup with 2 cups spinach and the chicken wouldn't mix together.

There must be something wrong with the amount of pepper...had to throw the dish out!

My husband made this dish for us tonight and the pepper was SO overpowering, we had to throw it away. Three tablespoons was way too much!! Since the recipe was easy and the appearance of the dish was attractive, I will try it again at a later date with way less pepper.

I didnt put on as much spice but must say super super super good! Will be making this and many other variations in the future...thanks for introducing me to manicotti

this was GREAT I did make some changes instead of the mushroom sauce I used Alfredo and Mozzerella instead of the marble and added mushrooms. also using a rotisserie chicken added flavor and saved on time. I will make this again soon!!

I made 6 mannicotti shells. I used half riccotta and half greek yogurt. I didnt add water because it would be too soupy.

Way to spicy. I'm the type of cook who follows recipes to the letter and the below three spices and their measurements where out of proportion.
2 tablespoons garlic powder
2 teaspoons ground oregano
3 tablespoons pepper

I was really looking forward to trying this, I still am but if you actually total up the amount of callories this makes its around 1000. 2oz of manicotti pasta is only 3 pieces, how on earth can that be divided into 10 servings...
