Smoked Mozzarella, Bean and Corn Salad
Black beans and sauteed corn are the heart of this refreshing, but filling summertime favorite.
Ingredients
Directions
- In a large bowl combine lime juice, olive oil, beans, cumin, and salt and pepper to taste. Set aside.
- Heat a nonstick skillet over medium-high heat, add corn and bell pepper and pan-roast, stirring occasionally until lightly browned, about 4 minutes. Remove from heat and let cool.
- Stir corn, peppers and remaining ingredients into black bean mixture and toss together.
- Chill until ready to serve. Divide evenly into four salad bowls.

This was really good, but I did deviate Fromm the recipe. I used diced tomatoes (canned) instead of fresh, and I also used regular mozzarella instead of smoked. My husband loved it!
