Roasted Sweet Potato & Black Bean Salad
Roasted sweet potatoes and black beans with arugula and red potatoes tossed in a red wine vinaigrette.
Ingredients
Directions
- Peel and medium dice sweet potatoes. Sprinkle with 2 tablespoons olive oil, salt, and pepper to taste. Roast at 400 °F (205 °C) for 15 minutes or until tender.
- Rinse and dry black beans.
- Wash, seed, and medium dice red pepper.
- Peel and mince garlic. Add to small bowl with remaining ingredients and whisk and set aside.
- Put together salad, toss and enjoy.
