Improvised high-fiber mini pumpkin muffins.
Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C).
- Mix flour, oats, baking powder, soda and pepper. In a separate bowl, mix pumpkin, applesauce, eggs, milk, vanilla, walnuts and raisins. No sugar needed because the pumpkin, applesauce and raisin make it sweet.
- Add dry mix to the pumpkin and stir until just blended.
- Lightly grease muffin pans with margarine (optional) or use non-stick spray.
- Place muffin pan in the center of the oven and bake for about 20-25 minutes (check to see if done with a knife).
- Let cool 15 minutes and enjoy.
