Pancetta Wrapped Asparagus Spears
A great Atkins side-dish or appetizer.
Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C).
- Spread olive oil on the bottom of a small baking pan. Cut off the tough part of each asparagus spear.
- Wrap each asparagus spear with a 3-4" wide slice of pancetta sliced very thinly and place them in one layer in the baking pan.
- Bake for 15-25 minutes or until pancetta is a little crispy.
- Enjoy!

Love Love Love this!! As to the one review who indicated that the pancetta overwhelmed the asparagus, it is important that the pancetta is sliced very thin. It will get crispy and not overwhelm the asparagus. I also give it a bit of lemon zest prior to serving which gives it a very nice "fresh" boost.

This is good, but my pancetta flavor overwhelmed the asparagus a bit. Maybe if my partial slices were thinner, as the recipe says to use? I'd also cut the cooking time a bit and broil for the last 2-3 minutes to get the pancetta crispier. I wonder if this would work with plain bacon?
