Egg, cheese and green onions baked in muffin size bites for a meal on the go.

Directions
- Preheat oven to 400 °F (200 °C). Grease mini muffins tins
- In a bowl combine all ingredients
- Fill the muffin tins using a spoon as the cheese and the onion will all run to the bottom.
- Cook for 20 minutes or until golden brown.

There can't be 47 calories in one of these. An egg alone is 72 calories, and then add the cheese and half-n-half and you probably get close to 150...

Awesome! I didn't have half and half so (on my mom's suggestion) I used carnation milk mixed with water, which actually gave it a tiny bit of sweetness. I also used twice the green onion because I adore green onion and Monterey Jack cheese rather than mozza and parmesan. If you reserve a bit of the cheese and sprinkle it over the top once they're done baking and let it melt it's absolutely divine. Might try with just egg whites next time.

I made these and used egg whites in lieu of a couple of the eggs and also mixed in mushrooms, green peppers and a few teaspoons of bacon bits. I then freeze them and take them for a quick and easy breakfast at work. Very good.

I replaced Half&Half with Heavy Whipped Cream, and it was still delicious. Maybe add a bag of splenda just to boost a hint of sweetness? Love the textures of the combination of cheese and onion. It melt in your mouth!
