Reduce the calories and sugar even more by using a reduced sugar cake mix.
Ingredients
Directions
- Mix the dry cake mix with 10-12 oz of diet soda. (Do not use the egg or oil listed on the box).
- Spray a 9 x 12" cake pan (or cupcake tin) with non-stick spray and bake according to package instructions.
- While some people believe an entire can of pop makes the cake too moist, 10 oz seems to be the least I've seen suggested, so experiment yourself to find the best amount for your taste.
- Tip: make sure to let the cake cook completely before you try to cut it. Because you aren't adding eggs, the cake will be tender and can tear if you cut it while it's warm. Some people have started adding 2 egg whites to the mix and report that the cake is firmer and rises better.
- Note: based on a recipe from Weight Watchers.

You can also use a can of no sugar cherry pie filling, spread on the bottom of the pan and add the cake mix on top and then the coke.

This was wonderful! I made it for my dad's birthday but in cupcake form, and it was so moist, no one noticed the difference. I made some changes just because I wasn't sure how well it would hold together so I used 3 egg whites and 1/3 cup unsweetened apple sauce, and the one can of diet coke. It was amazing, and topped with some frosting, no one knew the difference!

Not the best for SB as made here b/c FS does not have the reduced sugar cake mix by Pillsbury. I make it with the reduced sugar devil's food cake mix which has 150 calories per serving, 2g fat, 35g carbs, 1g fiber, 9g sugar, 5g sugar alcohol, 2g protien.
