Directions
- Mix all ingredients together.
- Spray a pie pan with cooking spray.
- Pour mixture into pie pan.
- Bake at 350 °F (175 °C) for 45-50 minutes.

So I wanted to try this due to loving spinach and seeing all the great recommnedations. I have to say this is probably one of the worst tasting spinach meals I have ever had. To my husband, so sorry for putting this in your lunch without tasting it first. Please forgive me.

Is this canned spinach or fresh? Do you think it matters (as long as its drained)? I prefer fresh!

Make sure your spinach is well drained and water squeezed out with a towel if using frozen.

I probably messed up something in the recipe, but when I made it, it was so watery that it didn't stay together and had to be spooned out of the pan. It also didn't cook in the 50 minutes. I ended up cooking it for an extra 30 minutes before it looked like the egg was cooked. The flavor wasn't bad, and tasted better with salt, but I prefer spicier food and feel it could have used some seasoning as it was very plain. I think cooking it over some sort of a rack allowing for drainage would be the best solution, possibly cutting back on the cottage cheese and adding more egg might make it stick together better. Overall it was very filling for the amount of calories, and I would probably try making it again with some modifications.
