A muffin in a minute with coconut and almond flour.
Ingredients
Directions
- Melt butter in a coffee cup.
- Add the dry ingredients, coconut flour, almond flour, sweetener, baking powder and coconut flakes. Mix well.
- Add the egg and mix well.
- Microwave for 70 seconds. Add butter to taste.
- Note: slice into thirds and then toast if you find them to moist.

I liked the muffin very much and I made a few changes to this recipe. I melted about 1 tablespoon of butter in the cup, in the microwave for about 20 to 30 seconds on high. Mixed the dry ingredients, 1 tb each of the almond flour, coconut flour, and sweetened coconut flakes,1/4 tsp b. powder and mixed in 1 tsp white sugar. Mixed the egg separately and added 1/4 tsp pure vanilla. I poured the dry mixture to the melted butter, added the egg mixture. Mixed well all ingredients together in the cup. Cooked in the microwave at power 6 or 60 for 1 minute and 30 seconds. Let it sit for 5 minutes. The muffin was large (high enough) to cut through it across into 3 slices, and can be toasted to brown it.

I like the coconut taste, but it was way too dry when I made it. I'm going to try it again with more butter.
