A delcious baked dish with eggs beaters, veggie sausage, potatoes and cheddar cheese.

Directions
- Pre-heat oven to 350 °F (175 °C).
- Cube and boil potatoes in water, drain.
- Brown veggie sausage in a frying pan.
- Add all ingredients in a bowl.
- Pour into a glass pie pan.
- Bake and serve!

Maybe 1-1/2 cups eggbeaters (that's the equivalent of 6 eggs), but it looks good!!

I made this for breakfast yesterday. It was eird that the recipe only calls for 1/3 cup of the egg beaters. The outcome was not very fluffy, and wondering if the amount of eggs called for is a typo. I used almost a 1/2 cup and still pretty "flat". Plus I used diced ham instead of sausage. It was still good, but maybe I'll increase the amount of egg again.

gimme lean is the brand. It's veggie protein that tastes exactly like sausage yet is lower in fat and cals but higher in protein!
