Directions
- Toast sliced almonds on 350 °F (175 °C) for about 5 minutes or until lightly browned.
- Mix ricotta cheese, Splenda and almond extract.
- Add the toasted nuts and serve.

Really good. I make only a 1/4 cup at a time and spread it on apple cinnamon rice cakes with cinnamon on top, as though it's cream cheese. Very nice breakfast, very filling & sticks to my ribs for hours.

I tried this with the vanilla extract, it tasted okay but nothing I'd eat too often.

I have actually tried this before. It is very good and is a good cure for a sweet tooth. I am not sure if you can have that many almonds during the induction phase though. But taste wise...DELICIOUS!
