Embarassing But Necessary
Prunes and prune juice might help + flaxmeal. Pleanty of water means 10-12 cups a day. If your diet is high in protein, that migh cause the constipation. Try to add healhy fats in your diet like 1/2 avocado a day + up to 3 Tbsp olive oil + salmon. Eating too little or making dramatic sudden changes in your diet causes constipation as well. Hope you feel better.

Atkins - psyllium or flax seed?
There is no strict recommendation how much flax to use on Induction. Since flax has no digestable carbs (fiber only) and high amount of good fat I would say use as much as you can. In my case - 2 Tbsp a day. I add it to my low carb protein shake. Same with psyllium (seems to have more pleasant taste).

SERIOUS PLATEAU!:(
Your calorie intake is fine. Try 2 days at 1500 Cal followed by one day of 1200. Dont go under 1200 Cal. Your diet should be strict with carbs. Only complex carbs and in moderation. Usually its 1 cup cooked old-fashoined oatmeal + one very small apple a day. Eat lots of green veggies (spinach, broccoli, celery etc.) watch your fat and make sure you eat protein with every meal. The perfect amount for you is a size of your palm - chicken breast, turkey breast, white fish, 5 egg whites (no yolks), tofu etc. And of course weight training - intense and at least 3 times a week.

Tired of meat, nuts, eggs and cheese
Well, being on Atkins limits your choices of food. Depending on how many carbs you are allowed to have each day you can add different veggies in your diet for snacks. My favorite - tomato "sandwiches" slices of steak tomato with basil leaves and fresh mozzarella cheese in between. Celery w/ peanut or almond butter is something else to try. I drink low-carb protein shakes. It took me awhile to find the one i like and can tolerate all right. It does not have to be Atkins. Try greek style yogurt or cottage cheese (if dairy is allowed in your stage) it has the lowest amount of carb and the highest protein in yogurt family. If you are sick of the choices allowed on your current stage - move to the next one. You cant be on introduction forever!!! Good luck
