I have 2 scales and I weigh on each. They are off for me by about half a pound but they are consistent. I pick one and use it exclusively. The other one serves as a sanity check. I put this in place since the time the cat pushed something under the scale and made it weigh differently for a week before I noticed, was really bummed to learn that 5lb drop wasn't real.
Also, I weigh at roughly the same time each day, that is important as well. I've seen weight fluctuate by more than a pound just by weighing then weighing again a few hours later.
Most importantly in my opinion is to record weight daily / analyze weekly. Every Sunday I calculate the average for the previous 7 days, then I compare that to the previous weeks' average. This gives me a far more accurate view of what is going on, particularly if you graph it in a spreadsheet. Daily weight graphs are very spikey and are more difficult to interpret. This leads to an increased chance of bad decisions or ineffective adjustments. The math essentially smooths out the spikes induced by daily weight fluctuations. Weighing only once a week is problematic on several levels, personally I would never go that route - I mean mathematically you can achieve the same thing but it will take 7x longer to get the equivalent amount of data.

not calculating my net carbs properly
I gave up on trying to track the sugar alcohol thing. In the end I just go with carbs-fiber. If sugar alcohols shouldn't be counted, I'm covered, if they are, fine, then I'm eating less carbs than I'm tracking so I come down on the good side of that equation.
As it is my net carb average per day tracking only carbs-fiber is at 21 so I'm not really worried about it.
