Blueberry Keto Pancakes for Brunch - 2 large eggs, 1/2 cup small curd whole milk cottage cheese & 1/2 TBSP psyllium. Beat eggs, then add cottage cheese, mix. When you add psyllium, mix really fast so it doesn’t clump. Mix in generous amount of cinnamon. Lightly mix in blueberries. Let set for about 10>15 minutes for psyllium to hydrate & thicken batter. Melt 1/2 TBSP VCO & 1/2 TBSP butter in non-stick pan over medium heat. Batter makes 4 pancakes. Spoon into pan. Wait for 1st side to get really brown (not burnt) before flipping. After flipped and done, move to plate and let cool a bit, then top with lightly sweetened or plain whipped cream. Sorry, I forgot to take a pic, but search my pancakes topped with strawberries & whipped cream, minus blueberries. Cup of coffee with heavy cream, gets you through the rest of the day! Total for Brunch: 500 cals, 16.9g net carbs, 5.1g fiber, 32.91g fat, 21.19g carbs, 27.12g protein. - 18% carbs, 60% fat, 22% protein. I love that FS does all the calculations!
