Try different types of houmous, there are lots of flavours about with bread sticks or cucumber and carrot sticks, guacamole etc. Veg samosas are usually vegan, there are lots of things you can do with cauliflower. A big vegetable chilli or curry served with rice, poppadoms or naan bread.....your options are endless once you can see past the meat :)

Put slits into aubergine (eggplant), push slivers of garlic into them and roast until soft. You can then peel and blitz with olive oil and lemon or leave the skin on and do it. Lovely tasting dip. Don't forget the slits though - I thought I'd blown the door off my oven the other day when I forgot and the aubergine exploded! Google tofu quiche too - quite a few ideas on various sites. One of my party staples is a great guacamole recipe I found a few years ago. http://www.foodnetwork.com/recipes/alton-brown/guacamole-recipe
It's best with the cilantro, jalapeño, onion, garlic, and tomato diced or chopped very small, and with fresh squeezed limes. I get compliments on this every time I make it. Standard tortilla chips or Fritos are great dipping implements, or if you want to go fancier it goes really well with tostones (fried and flattened nonripe plantains).

Spinach artichoke dip, humus, pasta salads, etc. can all be found by googling vegetarian appetizers. My go-to cookbook is by Nicola Graimes (photos of every dish) and dirt cheap if you buy gently used on Amazon

Congratulations to your son! If you don't mind serving some hot food, veg chilli goes down well with most people. Just put more beans in, and sweet peppers. Cumin gives it a nice flavour 😀
