Happy Thanksgiving, FS Buddies! Today I have been reflecting on all the things for which I'm thankful, and the list is long. I decided to go ahead and make a mini-feast for myself. Roasted turkey thighs, baked sweet potato, gravy. and the one dish which, for me, it simply isn't Thanksgiving without, green bean casserole. I ate to satiety, and I have to say, it's nice to get up from a T-day dinner and not feel like I'm going to explode! I didn't even miss the mashed potatoes, missed the cornbread stuffing a little (the gravy would have been REALLY good on it!), and the other fixings, not at all. I had one slice of jellied cranberry sauce, which ran the carbs up double what the rest of the meal had, but turkey and cranberry sauce are just a match made in heaven! Still kept below 50g net for the day, and it's my one meal, so I have no regrets. :D I never realized what good source of fiber sweet potato is, until I entered it in my food diary. I have been a wee bit concerned over how little fiber I get normally, so I may be adding them in periodically. Besides, they're SO yummy! Wishing you all peace, contentment and joy.
