Well, I put 10 eggs into the Instant Pot this morning at 7:30 and they hadn't even gotten up to pressure yet when the power went out AGAIN, and stayed out for three hours. Raisin Bran Crunch temptation was once again awakened. For lunch, I had planned to have two hard-boiled eggs and 2 pieces of crumbled bacon mashed together with 1 Tbsp. mayonnaise. BUT, no eggs when lunchtime rolled around. SO, instead, I had two of the 1-oz packets of Pearl Mozzarella and 3 pieces of the bacon I had pre-cooked yesterday. I was afraid it wouldn't stay crunchy in the ziplock bag on the counter, but it did. Now, my eggs are boiled and I've still got 4 pieces of bacon already prepared, so I'm good for the rest of the night. If we still have power, we'll have the Mahi-Mahi for dinner, with a bit of that rice. Fingers crossed!
