Good morning everyone! TGIF! I don't think I could do another weekday if I wanted to! Of course I don't think it will be that relaxing of a weekend... The initial plan was to spend the weekend with my husband and kids, maybe make use of our season passes to cedar point. I'm not confident in that anymore. My mom wants to take my brother to that rehab in Indiana this weekend, and of course I'll be expected to keep my sister for whatever day they choose to go. I'm cautiously optimistic, but of course this brings a whole new level of stress. Never happy, am I? lol
All things food? I'm on a roll. Yesterday I decided I was tired of eating eggs all the time and wanted something different... something pizza-ey. So I decided to make my own little version of pepperoni pizza. I used three corn tortillas (a brand that has around 40cal/tortilla) one fourth cup pizza sauce, 2oz mozzarella and a serving of pepperoni. First I toasted the tortillas in the oven at 400 until they were crispy, then added my toppings and cooked for a few more minutes. I was impressed, and it looked like a lot of food so I was excited about that lol. Here they are:
Around 400cal, not too shabby. Yes I had them for breakfast, don't judge me!
While I'm on a roll, I discovered these Hormel Rev wraps at Wal-Mart, lots of protein, only 13g carbs and only a buck fifty a piece! I was sold lol. It was very good, and something I can easily pair with a greek yogurt for a busy lunch, or late dinner while I'm in school. I struggle with getting enough protein and this was a much needed boost! (Not all flavors are so low in carb, check the label)
And here are the low carb high fiber tortillas Sherrie inquired about. It will be easier to recognize on the shelf than it will be to looks for a name, right?
So hopefully me sharing this info will help someone somewhere :-). All things exercise? Feeling good after my 'break' from the gym yesterday. I will be headed back to the gym this morning for some cardio and strength while I have the opportunity. It is important for me to take advantage of Fridays, because I usually don't 'gym' on weekends. I will kick extra ass today.
Now I have to hose down the kittens and a preschooler, throw on my baggy yoga pants and sprint out the door. I hope everyone is off to a great start this morning.
