OMG best meatloaf! Happy to share recipe, if you want it 😊

Later on I’ll post pic of meatloaf recipe here in comments, but the side is asparagus I threw together...I mixed olive oil, Parmesan cheese, minced garlic, salt and pepper together, coated asparagus well in it before putting in pan to bake next to meatloaf about ten minutes, then sprinkled mozzarella on it and put back in next to meatloaf last five minutes. Sometimes I put crumbled bacon in it too.

Okay. So, I don’t see how to post pic in comments like I was going to do to share the meatloaf recipe, but you can find it in the Taste of Home website and it’s called “Mom’s Meat Loaf”. I made some changes to make it gluten free and Keto friendly, including using crushed pork rind instead of saltines, Almond milk instead of milk, 2 lbs burger instead of 1.5, and 1/2 tsp black pepper instead of a dash.

I make a meatloaf with Korean pepper flakes and a glaze of ketchup, black bean paste and soy sauce. Yummy.

That sounds good! Never heard of Korean pepper flakes; what is it like?

Korean pepper flakes are mild on the Skoville scale between 3k-8k but they have a nice flavor. It's what gives Kimchi it's kick. The Black bean paste is what rocks though. Mixed with ketchup it's my favorite condiment.

Ketchup you be low carb but not brown sugar. I am going to look into the black bean paste. Is that like fermented black beans?

Sure thing, and if you want to keep it Keto, black beans are not a good choice, unless of course you’re planning them in your carb count 😊

00Marx00 - By "black bean paste" do you mean the Korean condiment that is used to make Jjajangmyeon (짜장면), or Chinese black bean paste of some sort? Either way, that glaze sounds delicious, but I have Korean black bean paste and gochugaru on hand so I could try it sooner rather than later. I live over an hour away from my nearest Asian grocery store, so if it's something Chinese ... or Thai... or Japanese, it would have to wait for a couple of weeks. That would make me sad... :)
