Directions
- Heat oil in skillet.
- Mix together zucchini, slightly beaten eggs, salt, pepper, garlic powder and onion powder.
- Drop by spoonfuls into the hot skillet.
- After browning on one side flip and brown the other side.
- Note: substitute egg whites to lower calorie, cholesterol, and fat counts.

That sounds so yummy!!!! With the atkins diet I am really trying to stay below 10g carbs. I think that this would be a great breakfast with maybe a piece of bacon or a cheese omlet. Thanks

This was really good, but I think next time I might do it without the eggs. And I served it for dinner, so that was kind of weird. I guess I wasn't expecting it to turn out so much like a breakfast food.
