This low fat and low calorie zucchini bread is a great homemade alternative to regular bread.
Ingredients
Directions
- Mix flour, cinnamon, baking powder, baking soda and salt in one bowl, set aside
- Mix Splenda, egg beaters, applesauce and vanilla extract in a larger bowl. Blend well and add flour mixture.
- Add in zucchini and walnuts and blend all ingredients until smooth.
- Pour into greased loaf pan and bake at 350 °F (175 °C) for 25 minutes.

Tastes good, but I had to bake mine much longer. Might add a little less apple sauce next time.

just eat with some egg beaters and you have a good meal. A little heavy on carbs but the protien in the eggbeaters will help balance it
