A wonderful low carb snack idea that you can have all day, but are yummy warm.
Ingredients
Directions
- Slice zucchini in 1/2" slices.
- Dip in egg mixture and roll in the crushed pork rinds and grated parmesan or asiago cheese.
- Fry in the olive oil and butter on medium heat.
- Let cool on paper towel and serve.

If you took out the pork rinds, would be ok.

Good tasty snack... I used the spicy pork rinds to give it a little spice.

I left out the pork rinds and added some nature's seasoning. They were really good.

You can't have pork rinds on South Beach, but sounds good!

I've been craving for fried Zucchini so I'm going to try this just leaving out the pork rinds.

Very good recipe. I used the spicy pork rinds and omitted the cheese. I had a really hard time getting the crushed pork rinds to stick though.
