A zesty lemon square on a shortbread type crust with reduced amounts of butter and sugar to reduce the calories.
Ingredients
Directions
- Heat oven to 350 °F (175 °C). Spray 8" x 8" baking pan with cooking spray.
- Mix 1 cup of the flour, 1/4 cup of sugar, and salt in bowl until well combined. Cut the butter into flour mixture until a crumbly dough forms.
- Press dough evenly into bottom of prepared baking pan. Bake until lightly golden (about 10-12 minutes). Cool crust completely.
- Whisk egg, egg white, and remaining 1/2 cup of sugar in bowl until combined. Grate zest and squeeze juice from lemon and add to egg mixture. Add baking powder and remaining 3 tablespoons of flour. Mix thoroughly.
- Pour liquid mixture over cooled crust.
- Bake until set and lightly browned on edges. This will take approximately 20 to 25 minutes.
- Cool completely and dust top with powdered sugar and cut into 16 squares.

Sweet and zesty! Recipe calls for one lemon, but after reading the comments, I used 1-1/2 large lemons. The lemon flavor was great. My finished product looked different from the photo; mine had a much thinner layer of filling. I wonder about doubling the topping? I wonder how many calories it would add?

I used 2 lemons as well - end product tasted great, but same as other reviewer - didn't look as nice as the photo...

not good, could onlt eat one. threw the rest away. They were mushy

I made this but it didn't turn out well... the crust tasted yuck... i thinkit was me more than the recipe... Maybe ill try it again soon!

Substituted sugar with Splenda, then the wife told me about “baking Splenda” oops. Also replaced the eggs with egg substitute. Still, a great recipe. Have yet to make it when the crust hasn’t just been dry and unformed, don’t know why it is always “powdery”.

used a baking pan that was about 12X8, or something of those dimensions. made very skinny ones. they're a great bite size treat thats both chewy, crunchy, lemony and short-bread like!

love sweet and zesty tart treat this recipe call for one lemon i took the liberty to add 3 instead yummy goood!!!!!!!! the crust was short-bread crisp and crunchy the taste was delicious
