A low-fat burger with lean protein that's a nice change from a beef burger.
Ingredients
Directions
- Cut salmon fillet into 1/2" cubes. Use fresh salmon for maximum flavor.
- In a medium bowl, mix water with wasabi powder and whisk until blended.
- Lightly beat egg white in a separate bowl.
- Add Dijon mustard, salmon, egg white, soy sauce, and sesame seeds to wasabi mix. Stir until mixed well.
- Form into a burger and grill (using a grill pan not BBQ) for 2-3 minutes per side or to desired level. Use caution when flipping burgers, as they may fall apart.
- Serve with a side of mixed greens to complete meal.

Thanks bneibaur. This was an interesting experiment, I couldn't find wasabi powder so used paste, couldn't find sesame seeds so used sunflower (could be the reason for the average rating.) It was tasty, but still quite bland. I find salmon to be a bland fish in general so I tried this in hopes of some diversity & though it made a noticeable impact on flavor it just didn't take it over the edge, once again the substitution in ingredients (noticeably sesame seeds) could be the reason. But it's definately worth a try. Enjoy!

This was SO great! I did have to add a lot more wasabi, mustard and soy sauce because I made 4 salmon fillets. I recommend adding the seasonings and then cooking a tiny bit to taste it and then adjust the seasonings to taste. They also didn't really turn out like burgers since they kind of fell apart but they were good anyway. Everyone in my family, including my picky little sister, loved it. All in all a terrific dish which i MUST make again!

I used fresh Salmon and what a difference!!! If you use canned salmon with this it comes out really dry. I had it on a toasted, 100% wheat hamburger bun with lettuce, tomato, and onion, and a side of Asian Green Beans. The Beans recipe can be found on the fatsecret site.
