Warm Chicken with Couscous Salad
Simple and very quick Moroccan-style salad.
Ingredients
Directions
- Chop the chicken into bite-sized pieces and dice the dried apricots. Finely chop the herbs.
- Prepare the couscous by placing in a large bowl and pouring over the boiling stock.
- Cover and leave for 10 minutes and then stir in the herbs, seeds, the spread, pumpkin oil and lemon juice.
- Toss together with all remaining ingredients and garnish with fresh herbs.

This is really quick and easy - perfect for making when you get home from work. At this time of year, when it's a bit chilly outside, we pop the finished salad in the microwave for a couple of minutes to heat it up at little.
