Seven vegetable soup with little to no oil...vegan and vegetarian!
Ingredients
Directions
- Sauté onion, leek, garlic and celery in the oil until tender.
- Chop all of the veggies into bite sized pieces.
- Add half of the tomato paste and continue to sauté until combined. When combined, add stock, water, and half of the chopped basil.
- Bring to a boil and add all the rest of the chopped ingredients and the rest of the tomato paste.
- Simmer for 2 hours. Add salt and pepper to taste. Check it every once in a while and flavor as necessary.
- When all the veggies have basically turned to mush, let the soup cool for about 30 minutes.
- Use an immersion blender or a food processor to puree the soup until the texture is completely smooth.
- Enjoy alone or with a small dollop of low fat sour cream.

yay! Pam spray butter flavor or "smart spread" instead of oil. dollop of Daisey fat free sour cream. ;)

terrible for atkins! but sounds really, really good if I wasn't on Atkins!!! Looks like a very yummy recipe...maybe I'll save this for when I lose the weight!!!

Some people may want to cut the oil, but a small amount of oil can sure add a lot of flavor. Even with the oil, I'd count this recipe as less than a point per serving - you could double the serving size and it would still be only a point per serving.

Great Soup! I cut the oregano to 1 tsp. added about 2 - 3 tsp. of Curry Powder. Served it with a dollop of lowfat yogurt.

looks yummy but way to much salt in there! Any way to cut that back? 4tbsp's sounds a bit much.
