Vanilla Pear Pancakes

These pancakes will satisfy any craving for bread.

Ingredients

Directions

  1. Peal, half, and core pear. Dice into 1" pieces.
  2. Place in microwave-proof bowl and sprinkle with Splenda and cinnamon.
  3. Microwave on high for 2 minutes.
  4. Meanwhile, put yogurt, oatmeal, egg whites and dash of salt in blender.
  5. Add pears. Blend until smooth.
  6. Use in same way as pancake batter, cooking over medium heat on non-stick griddle.
  7. Makes 3 medium sized pancakes.
