Directions
- Pre-heat oven to 410 °F (210 °C).
- Prepare pie crust (pre-bake if necessary).
- Slice tomatoes thinly, as well as cheese. Wash and chop thyme.
- Place tomatoes, cheese, and thyme on crust, drizzle with olive oil. Season with salt and pepper to taste.
- Bake for 30 minutes. Cool slightly and serve.
