An absolutely delicious bake the whole family will love that's low in points.
Ingredients
Directions
- Brown ground beef round and drain. Add onions, green peppers, water and taco seasoning and simmer for 10 minutes.
- Spray a 9x9" baking dish with non-stick cooking spray and layer as follows, 1st layer half of the meat mixture, half of the corn, half of the chips, half of the cheese. 2nd layer, meat mixture, corn, chips.
- Bake for 30 minutes on 350° F (175° C).
- Remove dish and top with remaining cheese. Return to oven and bake until cheese is melted.
- Serve with sour cream and salsa.

Corn and Tortilla chips are not allowed in Phase 1.

Works wonders with ground turkey. Deffinately going on the favorites list for my boyfriend and myself. I would suggest a shot or two of hot sauce ;)

We added some black beans to this and put a layer of chips on the bottom instead of the top. Very satisfying for such a low calorie meal!

Most taco seasonings have sugar added, which isn't allowed on SB Phase 1. Also no tortilla chips or corn on Phase 1 or 2.
