Sweet potatoes and apples add moistness and natural sweetness to this simple cake.

- Pre-heat oven to 350 °F (175 °C). Lightly oil an (8") baking pan with cooking spray; set aside.
- Peel, core, and grate apple. Peel and grate sweet potato.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg; set aside.
- In a second large bowl, whisk together sweetener (like Truvia) and egg white until well combined. Stir in apple, sweet potato, and vanilla and then add apple mixture to flour mixture and stir to combine.
- Transfer batter to prepared pan and bake until cake pulls away from the edges and is deep golden brown, 40 to 50 minutes.
- Set aside to let cool and then cut into squares and serve.

This cake is unexpectedly pleasant. It isn't your typical "cake." The sweetness is provided almost solely by the sweet potato and apple. I used only 2 tsp. Truvia. My kids even like it! This makes a great desert or even something different for breakfast with a cup of Joe. It isn't even half as sweet as coffee cake.
The consistency of the "batter" will have you thinking whether it is as it should be or if it should be more liquid. Rest assured...if the recipe is followed...you have it right.

A baking novice here...what size pan should I prepare? I've given a rating of 5 only cos my question will only be posted upon a rating. I'm being very hopeful...towards my baking that is...I trust that it's delicious!!! hehe.
