A tasty recipe to eat on cheat night - yummy with a salad and steamed carrots.
Ingredients
Directions
- Pre-bake the pie shell per instructions (or until looks like it's sweating).
- De-case sausage link and cut onion into thin rings, then sauté the sausage and onions and drain fat.
- Arrange the sausage and onions over the bottom of the pie shell.
- Squeeze liquid from spinach, then in a bowl whisk all remaining ingredients.
- Top sausage and onions with cheese mixture.
- Cover with aluminum foil and bake at 350° F (175° C) for 35-40 minutes or until done.
- Let sit 5-10 minutes before slicing.
- Note: you could easily use fat free mozzarella and/or turkey sausage instead to cut down on fat content.

Not a cheat night! I omit the crust and I have something like this every morning for breakfast. Lots of protein and veggies. YUM!
