Directions
- Heat vegetable oil in a medium sized pot, meanwhile blend onion, tomato, and pepper in blender and set aside.
- When oil is hot, pour in tomato mixture and immediately reduce heat.
- Allow to cook for a few minutes, until sizzling has stopped.
- Add broth, pepper, tomato paste and enough salt to taste.
- Other seasonings may be added if desired, as well as fried chicken or beef.
- Continue to simmer on low-medium heat for about 20 more minutes.

Just made this for the umptenth time. I prefer one or the other with the meats that way I can serve guests who don't eat beef just fine. Thanks for the great directions.
