This recipe was wonderful when served with the Poached Chicken Breasts with Gingered Applesauce.
Ingredients
Directions
- Bring the broth, cider, oil, pepper, allspice and salt to a boil in a medium saucepan over high heat.
- Stir in the couscous and bring to a boil again.
- Reduce the heat to low, cover the pan and cook for 2 minutes, or until all the liquid has been absorbed.
- Remove from the heat. Fluff with a fork. Cover and allow to stand for 5 minutes.

5 Points Per Serving. I served this with Poached Chicken Breasts with Gingered Applesauce, so I used sesame oil instead of the olive oil (to carry over the same flavors). Frankly since it's more flavored (and more expensive!) I only used a teaspoon, which reduces the points to 4 per serving.

I'll give this a try, but will substitute quinoa for the couscous (wheat allergy). Sounds really yummy!
