Spaghetti Squash with Turkey Meat Sauce
A surprisingly good meal that will make you forget you're dieting.
Ingredients
Directions
- Cook squash in oven until soft. Remove from oven and use fork to make "spaghetti".
- While squash is cooking in the oven, puree tomatoes. Then put into medium sauce pan with fennel and heat on low for about 20 minutes.
- In a non-stick skillet, sauté garlic, onions and mushrooms until onions are soft. Then add ground turkey and coriander and cook thoroughly.
- Add the ground turkey mixture to the tomato sauce pan and let simmer for another 4-5 minutes.
- Put "spaghetti" on plate and pour sauce on top.
- Enjoy!

Is two servings really accurate for this? That gives you a half a pound of meat per serving which is why the points are sooooo high. Like kfrancis, this is half of my points for the day :(

This looks fantastic. I believe the servings are miscalculated. To the people complaining about the points for a serving, are you really going to eat a 1/2 of meat and a lb and a half of squash? i mean, come on. Get a half of a portion and cut your points in half again, and i still bet you wont be able to eat it all

I think this sounds yummy and I agree that 1/2 of the serving would be MORE than enough. I do have one question/comment: I'm assuming the "1/4 cup of chicken stock" it to be pureed with the tomatoes to make the sauce? It is not mentioned in the steps...
