Spaghetti Squash with Marinara Sauce
Ditch the carbs and enjoy spaghetti without the guilt.
Ingredients
Directions
- Cut squash in half and remove seeds. Scrape seeds, drizzle with olive oil and sprinkle with salt and pepper.
- Roast squash at 375° F (200° C) until you can insert a knife without resistance, about 35 to 45 minutes.
- With a fork remove squash, should look like spaghetti.
- Plate, pour marinara sauce over squash and add parmesan. Enjoy.

I make it with homemade ragu or meatballs and tomato sauce. I love it!

Love this recipe. I microwaved the squash. Cut squash lengthwise very carefully. Pierce each half a few times. Place face down in a microwavable container with about 1/4 cup of water. Cover with Saran wrap and nuke for about 5-7 minutes (depending on how large the squash is) twice, turning once after first 5-7 min session.
Also, I actually didn't use any oil or salt. The Marinara sauce has plenty of salt. I used the organic tomato basil sauce they sell at Costco - yummy.

I made this recipe this week, yummy!! I did not use oil or salt either. I baked squash in oven. I seasoned some tofu with no salt Italian herbs, spay some Pam in a pan on the stove, allow tofu to brown. What a meal this was. Tofu, pasta sauce, squash and a dash of grated Parm cheese. To Die for!!!!
