Sausage and Bean Casserole

A really tasty way to eat your sausages!

Ingredients

Directions

  1. Cut the sausages into chunks and add to the pan. Fry in a little oil until cooked through.
  2. Chop up the peppers and add them to the pan. Fry until the peppers have softened.
  3. Rinse the beans and add them to the pan.
  4. Add the tomatoes and cook until heated through. The tomatoes will take on the flavor of the sausage and peppers.
  5. Serve as it is, in a bowl.

my whole family loved it. kids and significant other put it over rice but it was great as it was.

sausages not too good for GI. To make it even healthier - grill the sausages rather than frying them.
