Pumpkin Pie
You won't miss the crust or the sugar in this rich guilt-free dessert.
Ingredients
Directions
- Preheat oven to 425 ° F (220° C). Mix sweeteners, salt and spices in a small bowl. Beat eggs in a large bowl.
- Add pumpkin and spice mixture to eggs, mix well. Stir in heavy cream and sour cream.
- Pour into 2 glass pie plates. Bake at 425 ° F for 15 minutes, reduce oven to 375 ° F (190° C) and bake another 40-50 minutes until knife inserted near center comes out clean.
- Serve with whipped heavy cream.
- Substitutions: You can use 12 packets of Splenda plus 1 1/2T of (non-bitter) Stevia instead of the 24 packets of Splenda. You can use 3 1/2 teaspoons of pumpkin pie spice instead of the spices listed.

I'm so excited to find your recipe. I found out I was gluten intolerant last year and diabetic and didn't get pumpkin pie last year. I look forward to trying your pumpkin pie recipe.

ps. I think this is pretty good for the weight watcher plan. (No added sugar and if I change the cream to fat free it would be the low carb/sugar Core Plan) But if I leave in the Cream I would just count some weekly Flex points.
