- Combine pudding mix, evaporated milk, pumpkin and cinnamon in a bowl until well combined.
- Gently fold in the whipped topping.
- Cover and refrigerate for at least one hour before serving.

Sounds great, but not on Atkins. Instead, try using tofu and pumpkin along with cinnamon and fresh nutmeg (mix in food processor) great flavor and good for you.

It sounds great but has more calories than I would like and I think I will modify it somewhat to lower the calories, fat and carbs

I made this for Xmas using sugar free instant pudding and pumpkin. You can skip the milk because the pumpkin has enough liquid. the calories are approx the same, but the carbs are much lower

OMG sooo delicious for such a low cal dessert. Kids love it too!! I also used fat free, sugar free vanilla pudding mix.
