Poached Chicken with Gingered Applesauce
Great with the Spiced Couscous.
Ingredients
Directions
- Sprinkle the chicken with the garlic salt and pepper.
- Pour the apple juice into a large non-stick skillet and bring to a boil over medium heat.
- Add the chicken and cook for about 5 minutes, or until the meat looks opaque.
- In a medium bowl, mix the applesauce, ginger, soy sauce, Chinese 5-spice blend, oil and vinegar.
- Remove the cooked chicken from the skillet and place it on serving plates.
- Add the applesauce mixture to the pan, mix well with the pan liquid and bring to a boil. Spoon over the chicken. Sprinkle with the cilantro.

4 Points Per Serving. I'm not sure that Alton Brown would call this “poached”, strictly speaking, since there really isn't enough apple juice to cook the chicken! I served this with Spiced Couscous, which called for apple cider, so I used it instead of the apple juice. It was delicious!

I also thought it wouldn't be enough liquid, so I added some water with the juice--then had to boil some off before adding the applesauce! Didn't have rice wine vinegar, so I used apple cider vinegar, & didn't have time to chop the ginger root (it was late, & I was making a double recipe to have leftovers), so I just used a heaping teaspoonful of powdered ginger--it was delicious. Served it over plain couscous, with a side of green beans & a salad
